If you've got a couple of ripe bananas sitting in the fruit bowl, these cookies are a great way to use them up. The banana keeps the cookies super soft, while the peanut butter and jumbo oats give them plenty of flavour and texture.

I've added a small amount of dark chocolate chips too, just enough to give you those little pockets of chocolate without taking over the cookie. They're really simple to make and a great one for baking with the kids.

Makes approximately 10-12 cookies.

Ingredients

  • 2 ripe medium bananas

  • 120g smooth peanut butter

  • 100g jumbo rolled oats

  • 50g plain flour

  • 25g soft light brown sugar

  • 1 tsp vanilla extract

  • ½ tsp baking powder

  • 50g dark chocolate chips

Method

  1. Preheat the oven to 170°C fan and line two baking trays with baking paper.

  2. Peel the bananas and mash them in a large mixing bowl until mostly smooth.

  3. Add the peanut butter, brown sugar and vanilla extract and mix until well combined.

  4. Add the jumbo rolled oats, plain flour and baking powder and mix until everything is evenly combined.

  5. Fold through the dark chocolate chips, keeping them well spread through the mixture.

  6. Leave the mixture to stand for 5 minutes so the oats can absorb some of the moisture.

  7. Divide the mixture into 12 portions and place onto the prepared trays, leaving space between each one.

  8. Flatten each portion into a thick cookie with the back of a spoon or your fingers.

  9. Bake for 12–15 minutes, until the cookies are lightly golden and set around the edges.

  10. Leave on the trays for 5 minutes, then carefully transfer to a wire rack to cool completely.

  11. enjoy
