Alphabet cookies

Ingredients
• 150g unsalted butter, softened
• 150g caster sugar
• 1 medium egg
• 1 tsp vanilla extract
• 330g plain flour
• ¼ tsp baking powder
• 200g icing sugar
• 3-4 tablespoons water
• Food colouring (as desired)
Method
1. In a large mixing bowl, cream together the butter and caster sugar until light and fluffy.
2. Next, beat in the egg and vanilla extract until well combined.
3. Then add the flour and baking powder, and mix until a dough forms.
4. Wrap the dough cling film, and chill in the fridge for at least 30 minutes.
5. Now, while you wait prepare the icing for decorating.
6. In a medium bowl combine the icing sugar with 3-4 tablespoons of water. Stir until you achieve a thick but pipeable consistency.
7. Divide the icing into small bowls and add food colouring of your choice to create different colours for each letter.
8. Transfer the coloured icing into small piping bags and set to one side.
9. Preheat your oven to 160°C fan
10. Roll out the dough on a floured surface to about 5mm thickness.
11. Use your Alphabet cutters to cut out letters from the rolled out dough.
12. Place the cut out cookies on a baking tray or sheet lined with parchment paper or a silicone mat.
13. Bake in the oven for 8-10 minutes or until the edges are golden.
14. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
15. Once completely cooled, you can start decorating. Cut a small hole at the end of each piping bag.
16. Piping any designs or pattern you wish on each of the cookies.
17. Allow the icing to set before enjoying the cookies.
