Chocolate Tray Bake Cake

Ingredients
• 225g caster sugar
• 4 large eggs
• 200ml vegetable oil
• 60ml milk
• 200g plain flour
• 25g cocoa powder
• 2 tsp baking powder
• 200g dark chocolate, finely chopped
• 200ml double cream
• Lots of Smarties or what you prefer
1. Preheat your oven to 160°C fan and grease and line a baking tray (approximately 9x12 inches).
2. In a large mixing bowl, whisk together the caster sugar, eggs, vegetable oil, and milk until pale and well combined.
3. Then add the flour, cocoa powder, and baking powder. Mix until combined and smooth.
4. Pour the batter into the prepared baking tray, spreading it evenly.
5. Bake in the oven for 25-30 minutes or until a skewer inserted into the centre comes out clean. Allow the cake to cool completely in the tray.
6. For the chocolate ganache, finely chop the dark chocolate and place in a microwave-safe bowl, then pour over the double cream.
7. Place in the microwave for short 20-second bursts, stirring between each burst, until the chocolate is fully melted and the mixture is smooth.
8. Cover the ganache with cling film and leave to cool to room temperature.
9. When cooled, mix back up to an even consistency and spread over the cooled cake, spreading it evenly with a spatula.
10. While the ganache is still soft, decorate the cake with Smarties.
11. Allow the ganache to set before cutting the cake into squares and serving.
