Cocoba chocolate button cookies

Ingredients
• 250g plain flour
• ½ tsp bicarbonate of soda
• ¼ tsp salt
• 1 tsp ground cinnamon
• 125g unsalted butter, softened
• 125g light brown sugar
• 50g granulated sugar
• 1 large egg
• 300g Milk chocolate buttons (half chopped, half whole)
Method:
1. Line two baking trays with parchment paper.
2. In a medium bowl, whisk together the flour, bicarbonate of soda, salt, and cinnamon; then set aside.
3. In a stand mixer, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy.
4. Beat in the egg until well combined.
5. Then, tip in the flour mixture and mix until a dough forms.
6. Gently fold in 150g of the chopped milk buttons until evenly distributed throughout the dough.
7. Weigh out your cookie dough to about 50g (to make 15 cookies) and roll into a ball.
8. Place onto the prepared baking sheets and flatten slightly, then place into the freezer for 30 minutes (or in the fridge for 1 hour).
9. Preheat your oven to 160°C fan, remove the cookies from the freezer, and bake for 10-12 minutes until the edges are set but the centers are still slightly soft.
10. Remove from the oven and place 4 buttons onto each cookie, then place back into the oven for a further 1 minute.
11. Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a wire rack to cool completely until the chocolate on top is set.
