Chocolate Bourbon Biscuits

Ingredients

• 220g plain flour
• 40g cocoa powder
• ½ tsp baking powder
• 100g unsalted butter, softened
• 100g caster sugar
• 1 large egg
• 1 tsp vanilla extract
• 1 tbsp milk
For the filling
• 75g icing sugar
• 40g unsalted butter, softened
• 10g cocoa powder
• 1 tsp milk (if needed)
Method
1. Line two baking sheets with parchment paper.
2. In a bowl, cream together the butter and sugar until light and fluffy.
3. Add the egg and vanilla to the butter mixture, mix well.
4. Next, add the flour, cocoa powder, and baking powder and mix until a dough forms. If the dough is too dry, add the milk, a little at a time, until it comes together.
5. Roll out the dough on a lightly floured surface to about 3-4mm thick. Use any biscuit cutters you like to cut out shapes and place them on the prepared baking trays. Make sure to cut out an even amount of each shape to sandwich them together.
6. Once you have cut out all the biscuits, place them in the fridge for 30 minutes to firm up.
7. Preheat the oven to 160°C.
8. Bake in the oven for 8-10 minutes, or until firm to the touch. Allow the biscuits to cool completely on the trays before transferring them to a wire rack.
9. To make the filling, beat together the softened butter, icing sugar, and cocoa powder until smooth and creamy. If too stiff, add the milk to loosen the mixture.
10. Once the biscuits are completely cooled, pipe the filling onto the bottom of one biscuit and sandwich another biscuit on top.
11. Repeat with the remaining biscuits and filling.
